Vacation anyone?

Josh and I went on vacation in the middle of October to the Oregon coast. It was splendid! My brother apartment sat for us so there wasn't any stress about anything going on while we weren't there. The first night we stayed in Portland and then drove to McMinnville Friday morning to visit with Josh's grandparents on his Dad's side. It was a great detour, I enjoyed the small amount of time we spent in McMinnville. I liked it so much I poised the question of moving there someday. I think Josh was all for it. 
This was my first trip to the coast, it certainly will not be my last. I would love to live in a coastal town, just hopefully not a touristy one. Here are a few pictures from our trip.

Chicken: The blank canvas of meats.

Today I had nothing to make for dinner and I looked in my freezer only to find chicken... I don't like chicken very much because it's so plain. I'm trying to step outside my box of "Chicken is plain" and find ways to make it fun. Tonight I'm trying a chicken alfredo recipe I got off the internet and I never follow recipes I just make them my own. I started off with one can of cream of chicken soup and 1 stick of unsalted butter. I don't know why I used that much butter. I just did, so deal with it. I put those in my warmed up crock pot and let the butter melt in with the soup. It was smelling so good. Then I spiced it up by adding some freshly ground black pepper. While I was letting the soup and butter come together I was cutting up my boneless, skinless chicken breasts into one inch squares and added those to the crock pot as well. (2.25 pounds of chicken is how much I had.) Now that's been in the crock pot for about 10 minutes, so we'll see how things turn out in a few hours.

Finally it has snowed, stayed for more than a few hours and the roads are covered. It's finally winter. Wooo!

My virtual bridal party!

Eggs, the chameleon of food.

I am not big on eggs, never have been. But a few years ago my mom got me a bottle of flavored olive oil and the only thing I ever used it on was eggs. It made them taste so good. I finally bought myself another bottle and this morning Josh and I are having eggs!

They are delicious.

We finally deorated our tree.

Tonight we had quite an adventure. We moved the bookshelf and moved the tree where it was. It was pretty tough to move the bookshelf but we got it done. Then we decorated our tree and hung up our stockings. It was a great evening.
